White Bread Recipe
(Makes 6 loaves or 4 dozen rolls)

Ingredients:

  • 1 square margarine
  • 1 quart lukewarm water
  • 1 1/3 cups powdered milk
  • 4 Tablespoons sugar
  • 3 packages or level Tablespoons yeast
  • 11 cups bread flour
  • 1 Tablespoon salt

 

Equipment needed:

  • Electric mixer  with both wire whisks and dough hook (I use a Bosch)
  • Microwave oven
  • Liquid thermometer
  • Measuring cups and spoons
  • 1-cup and 1-quart Pyrex, glass measuring cups
  • Large, plastic bowl (I use a Tupperware bowl)
  • 4-inch round cookie cutter for rolls (smash it so it's oval shaped)
  • 6 loaf pans or 2 jelly roll pans
  • Pastry brush

 

Instructions:

  1. Melt a square of margarine in a 1-cup, glass Pyrex measuring cup for 45 seconds in the microwave.
  2. Put the melted margarine, water, powdered milk, and sugar  in the mixer bowl
  3. Mix
  4. Check with thermometer--mixture must be between 100 and 110 degrees F. (Heat a bit in microwave or let sit to cool until it is at that temperature.)
  5. Add yeast and mix.
  6. Remove the wire whisks and let it sit about 10 minutes (until foamy) while you measure the flour.
  7. Insert the dough hook.
  8. Add flour/salt about 2 cups at a time and mix.
  9. As soon as all flour is added, mix for 5 minutes on slow speed. In the Bosch mixer, the dough starts cleaning the sides of the bowl after about 4 minutes.
  10. The dough will be sticky, don't add more flour. Put dough in large plastic bowl and cover with bowl lid.
  11. Let raise 60 minutes.
  12. Remove the lid and pull the dough away from the sides of the bowl. Punch the dough down to remove air.
  13. Cover and let raise 15 minutes.
  14. Remove dough from bowl and shape into 6 balls for loaves or into 4 balls for rolls.
  15. Cover dough balls and let rest 5-10 minutes while you grease the loaf or jelly roll pans. NOTE: I use textured Teflon loaf pans and do not grease them. I spray the jelly roll pans with PAM instead of greasing them.
  16. Shape into loaves or roll into 1/2-inch and cut out with cookie cutter. If you are making rolls, the bottom side of the dough will be sticker that the top. Fold over the roll so the sticky side is on the inside and push down to seal it--makes Parker House Rolls. Each of the four balls makes a dozen rolls.
  17. Let raise until dough is up to the top of the loaf pan. For rolls, let raise about 1 hour or until rolls touch each other and are well-rounded.
  18. Bake loaves for 30 minutes and rolls for 15 minutes in 375-degree oven.
  19. After removing from oven, put on cooling rack and brush very lightly with melted butter.
